Welcome to Peak Spirits®, the distillery that makes premium spirits from the finest organic orchard fruit in the world, grown right here in the North Fork Gunnison Valley of western Colorado. All Peak products-CapRock™ Vodka, CapRock™ Dry Gin, Peak Eaux de Vie, and Peak Estate Grappa-are made at the Peak Spirits Distillery on Jack Rabbit Hill, all are blended with naturally soft and pure mountain water from our CapRock private source, and all are certified organic.

Peak Spirits is the 1st distillery in the US focused on making premium products from locally grown/sourced organic produce. This singular focus on sourcing locally, where we know and constantly work with each of our organic growers, ensures we always get the freshest, highest quality produce. In 2007 we worked with 5 organic growers who are all within 12 miles of the Peak Spirits distillery. Even the water we use with our distillate is carefully sourced. We use only unprocessed mountain water from our CapRock source on Grand Mesa, 22 miles from the distillery.
Peak Spirits Gains Biodynamic® Certification
We think of our spirits as agricultural products, like the way the best estate winemakers think of their wines. We think what happens in the orchard is as important to product quality as what happens in the distillery. That’s why ALL our growers are certified organic, and why we pay them premium prices for their fruit, almost 200% higher than going market prices in fall 2007.
