CapRock® Organic Dry Gin is a unique blend of fruits, buds, seeds, and spices infused and distilled in a base spirit made with organic Jonathon and Braeburn apples. The apples are organically grown by Gunnison River Farms, Ela Family Farms and Mountain Spirits Farm. 12 different "botanicals" (some dried some fresh) and 2 fresh juices are either macerated and/or boiled or steamed all together at final distillation to produce layers of fresh aromas and tastes. This is not a compound gin, nor do we use flavor oils or concentrates; only whole botanicals and juices are blended and distilled together in the final run. CapRock Gin is 41% alc and available in 750ML and 200ML bottles.
CapRock® Organic Vodka is a straight vodka made with Biodynamic® Chambourcin grapes grown at Jack Rabbit Hill, where the Peak Spirits distillery is located (Jack Rabbit Hill and Peak Spirits are demeter-certified biodynamic). The grapes are wild-fermented. No commercial yeasts or other additives are used to alter the character of the fruit. Research shows that native yeasts-which form and exist naturally on healthy, clean grapes-produce higher concentrations of glycerol during fermentation than artificial fermentations. Glycerol is the stuff that makes CapRock's mouthfeel and finish so round and rich. Also, the grapes are fermented and distilled whole, including skins and seeds, contributing soft fruit tannins to the long, textured finish. The redisitilled Biodynamic grape spirit is then added to organic neutral wheat spirit and charcoal-fined before bottling. CapRock Organic Vodka is 40% alc and available in 750ML and 200ML bottles.
Peak Pear is an aperitif brandy that make a perfect opening cocktail over ice. A great way to wake up the tastebuds for a fine meal. We don’t add sugar or other sweetener so it’s not as sweet as a liqueur. We just take our organic pear eau and blend it with organic pear juice for a nice, light spirit at 18% alc. Available in 375 ML.
Peak Organic Eaux de Vie are made with locally grown, whole-fermented mashes of rosa & cresthaven peaches, green bartlett pears, montmorrency cherries & braeburn & jonathan apples. Nothing captures the pure essence of superior fruit like a well made, unoaked eau de vie. Available in 375ML and 200ML. 40% alc.
Peak Organic and Biodynamic Estate Grappas, like the finest from Italy, are distilled from fresh, dripping-wet, soft-pressed pomaces of organic Pinot noir, Chardonnay, and Riesling grown at Jack Rabbit Hill. We don’t “stretch” the pomace by adding water & sugar and refermenting. Just the original pomace is distilled to capture the concentrated aromas and smooth finish that characterize great grappa. Available in 200ML. 40% alc.
